a snowy fall day

Sunday the 18th of October, I woke up to snow. Actually, I woke up to rain, which promptly turned to snow. Sadly, I discovered this through facebook where everyone decided to update their statuses at the same time to exclaim about the snow in October. I jumped on our couch and looked out the window the find big fat gorgeous snowflakes pouring out of the sky. Luckily they were not sticking to the ground. Double luckily, it was Sunday and I am not currently in classes and not have to study. Though I had various errands that I had planned on doing, football watching won. All in all, it was a good football day–I watched the Giants lose, the Patriots killed the Titans and even the Jets lost. Amazing! If only the Colts had lost, it would’ve been perfect. Oh well, you can’t have everything.

The crappy weather also made it a perfect day for something warm and comforting. As Rabi doesn’t eat meat, sometimes these things are harder to find as beef stew or non-vegetarian chili are simply not options. Also, the traditional Shepard’s Pies or pot pies are not nearly as satisfying. Luckily, there is the ever versatile dish: soup! Nothing says cozy and winter like curling up with a steaming bowl of soup. Honestly, beef stew and such are tasty, but things like soup I actually enjoy vegetarian as they can be hearty and filling yet still healthy. I found this soup on the kitchn an amazing part of Apartment Therapy. It has a lot of interesting recipes as well as anything else kitchen related that you can imagine.
