A Make Ahead Brunch: Spinach and Cheese Strata

As I mentioned in my Mother’s Day post, I made brunch for my mom this year. I really wanted to do something nice, but am so not a morning person and knew that if I left stuff for the morning of, it would result in a really cranky brunch. I started out with the idea of doing a savory bread pudding. Then I was inspired by The Family Stone and found some strata recipes. Have you seen the movie? It’s one of those movies where it’s so awkward and uncomfortable that I have to watch the entire movie or else I have this weird gnawing feeling in my stomach all day. Tomato and Leek Quiche…I think

Oy. I made this so long ago that I had a hard time remembering what I had done with this recipe. The original I had found was a tomato, spinach, mushroom quiche.  But as always with my CSA, I clearly needed to use up some type of vegetable, so I turned it to a tomato and leek quiche. Regardless of the filling, the potato crust was what peaked my interest in this recipe. I had already tried out a traditional butter/flour crust, so this was a nice change. read more »

Making Quiche

Each week, I look into my refrigerator and realize I still have half my CSA vegetables left, despite my best effort. How do you use a bunch of veggies? Well there’s soup (stay tuned!), stir fry–and then there’s quiche. I forgot to mention that in addition the crisper bin full of vegetables, I also always have dozens of eggs. See, in addition to the vegetable share, I also signed up for the egg share. I thought half a dozen might not be enough, but boy was I wrong! read more »
