I’m kind of torn about homemade pizza dough. On the one hand, pizza is that comfort dinner that is not only delicious, but is super easy because you have it delivered to your door. When you start making your own dough and subsequently your own pizza, you’ve really taken the easiness factor out of pizza–suddenly you’re waiting for dough to rise and stretching it out and shoving it in the oven.
You guys–summer is done. It’s Labor Day Weekend and today it was legit cold to the point where I actually needed the new fleece I just bought. I barely broke a sweat while I wore it this morning. While Fall isn’t so bad, I’m really sad to see the summer go for a bunch of reasons. One of those is the produce. I’ve actually been able to frequent the Greenmarket this summer and it’s been such a delight getting fresh in season fruits and vegetables.
I really enjoy meatballs. One of my favorite restaurants is The Meatball Shop because they serve you all sorts of meatballs over delicious things like polenta or vegetables. While I like them over spaghetti, I think having a saucy plate of meatballs and some delicious bread to dip in the sauce is actually my favorite way to eat them.
These savory rolls are so simple and genius, I’m a little mad that I didn’t think of the recipe myself. Besides being delicious, they are easy and quick, which makes it the ideal weeknight meal. Fresh pizza dough is such a great thing to have on hand. You can simply make yourself a homemade pizza or freeze it for a rainy day. If I’m going to defrost the dough, I’ll either place in the fridge the night before, or put it on the counter the day of.
When I first started cooking, a quick meal that I used to love to make was a quick quesadilla. I used to take refried beans and grated cheese and heat it up in a pan. I used to serve it with salsa and it all resulted in a filling dinner in 15 minutes. While it’s fast and delicious, I feel like sometimes it needs something more.
I’ve become obsessed with ricotta as of late. I found this fresh ricotta at Whole Foods that I’ve been slathering on toast in the morning, along with some of Mike’s Hot Honey. I’ll give you a minute while you follow that link and then purchase some of this honey. It’s amazing.
If you’re starting to cook and want to up your game a little bit, a stuffed pepper recipe is great to have in your back pocket. They look so fancy, but in reality if you can mix stuff together and turn on an oven, you’re good to go. I always love a dish that makes you look like a culinary school grad!
