Brown Butter Blueberry Muffins

I feel like I make a lot of blueberry muffins. Well, when Joy the Baker put out a cookbook, I snatched it up pretty quickly. I’m pretty sure I will eventually make every single thing from that book, but my first recipe was these muffins. I’m not sure why  I love muffins so much, but they were one of my go to childhood breakfasts. Of course you could make them healthier with wheat flour or no butter, but really, that’s not why I eat muffins. Plus the ones you make at home don’t tend to be as large as your head like you find at a bakery. And since we’ve already filled our muffin with all the ‘good’ ingredients, you may as well go all the way and add a crumb topping. Live a little! read more »

Cinnamon Roll Muffins

Oh yes, Happy New Year! I wish I had some cool sparkler recipes or something else that is festive. Instead, I’m going to talk about this recipe, a union of two awesome things: cinnamon rolls and muffins. I’m a big fan of cinnamon rolls. Unfortunately, they take forever and though there are overnight recipes out there, it’s really hard for me to remember to do anything the night before. Amazing, Life Changing, Blueberry Muffins

I’m a huge muffin fan–especially blueberry ones. I know they’re not the healthiest of breakfast foods and that they’re really a cousin of cake, but really, I just love them. I blame my mom. We always had a supply of huge, buttery bakery muffins. To her credit, we would only eat a quarter at a time and sometimes she would make me eat the bran kind as well. Gross! Really though, there hasn’t been a muffin that I didn’t like.
