Overnight Bircher Muesli

Are you a resolution person? I’m completely not into that New Year/New You stuff. I’m not going to suddenly wake up at 4am and workout for 2 hours since I am not a morning person. That being said I am definitely a breakfast person. That wasn’t always the case, but for the past couple years, I’ve woken up STARVING every morning, which has necessitated the whole eating breakfast thing. The thing about needing breakfast and not being able to wake up in a timely manner is that I never have time to make breakfast.  So basically I need to eat something, but without it taking any time. Oh also it should be nutritious and filling.

Enter overnight Bircher Museli, which really makes everyone’s life easier. What is Bircher Museli? It’s basically oats soaked in milk overnight, which makes them soft enough to eat. For these pre-made jars, you add everything to your non-dairy milk of choice at night, so it’s all ready to go! You can also just prepare the oats part, then add all your mix-ins in the morning–it’s all very flexible!

About 30 minutes of prep work can give you an easy and filling breakfast. Plus I make these in mason jars {I know…cue eye roll}, so it’s portable too. This recipe is also easily adaptable. Use your favorite non-dairy milk, favorite nuts, favorite dried fruit for your own combo. I will say that the apricots hold up the best if you’re going to make a couple of days at a time. I tried dried cranberries once and they got really mushy, so I would probably add them to each jar the morning you’re going to eat them. I also would add fresh fruit the morning-of as well.

I’ve been sticking with the hazelnut/apricot combination for now. I think almonds and cherries would also be delicious or walnuts and cranberries. My suggestion is to TOAST YOUR NUTS. I never do because I’m beyond lazy, but it truly makes a difference. It’s not that untoasted nuts are bad, but the toasted ones are so much better. I usually toast them in a 350 degree oven for about 10 minutes or until fragrant. So the New You can be a breakfast eater, toast their nuts and save the world!

Overnight Bircher Muesli

1/2 cup rolled oats {gluten-free if necessary}
1 tsp chia seeds {I actually haven’t added these, mainly because I keep forgetting to buy them}
4-5 dried, unsulfured apricots, chopped {or about 2 tablespoons of your favorite dried fruit}
2 T toasted hazelnuts, chopped {or your favorite nut or seed}
1/2 cup fresh blueberries {or fruit of choice}
1 cup unsweetened almond milk + 1/4 cup for the next morning, if desired
1 tsp maple syrup {or manuka honey or other sweetener}

Combine the rolled oats, chia seeds{if using}, apricots, hazelnuts, almond milk and maple syrup in a mason jar or other container. Shake it up and then let it sit in the fridge for at least 6 hours up to overnight.

In the morning when you’re ready to eat, grab a jar, add your fresh fruit as well as some extra milk if you want a looser texture. Enjoy!

I usually double or triple this recipe so I have a couple days worth at a time.
